Delicious savoury muffins made with roast meat leftovers

Jesse Felthuis, the Head Chef at Gecko Culinary Adventures in Durban, shares a recipe for leftover roast meat muffins.
Do you have food that is about to expire or left-over meat that you want to turn into an amazing dish? Then this recipe is for you.
Jesse Felthuis, the Head Chef at Gecko Culinary Adventures, has come up with a muffin recipe that uses left-over meat, bread, and roasted vegetables.

The muffins are not only meaty but also cheesy.
Below is the recipe for the delicious muffins.
Egg Muffins
2 slices bread – toasted – sliced into small cubes
6 eggs
2 cups milk
Salt and pepper to taste.
Method:
In a bowl, beat the egg, milk, salt, pepper together until combined.
In a well lubricated muffin tin, evenly distribute the toasted bread cubes, add your choice of filling ingredients and then cover with the egg mixture.
Bake in a moderately hot oven for about 15 minutes or until they have puffed up and the egg is cooked.
Serve warm.
Add:
2 cups of the following to the muffin tins:
Cooked bacon or ham
Chopped cooked boerewors
1 chopped tomato
De-boned chicken bits
Chopped up roast meat
Steamed or roast vegetables
Spring onions
Grated cheddar or mozzarella cheese
Peppadews, olives, capers.
Chef Jesse’s Tip:
I love to add a teaspoon of curry paste or tomato pesto to the egg mixture to perk up the flavour and I always top it off with cheese.
