Landi Govender, from The Tocka Blog, is back with another mouthwatering, easy-to-make recipe. Of course, she has to add a little razzle-dazzle to her recipe.
She drizzles her pumpkin fritters with a homemade butterscotch sauce.
"I’ve been craving pumpkin fritters – or as my kids like to call them, pumpkin gulgulas – for the longest time. So, I finally gave in and whipped up a batch for brunch. The best part? This is a one-bowl recipe. Just toss all the ingredients into a bowl, give it a good mix, and you’re ready to go – my favourite kind of recipe," says Landi.
Here's how to make pumpkin fritters.
Pumpkin fritters ingredients
- Oil for frying
- 125g of cooked pumpkin, puréed
- 113g self-raising flour
- 25g castor sugar (or swop for light brown sugar)
- 1 large egg
- 60g milk
- 1/2 tsp mixed spice
- 1 tsp cinnamon powder
Butterscotch sauce ingredients
- 100g muscovado sugar
- 125ml pouring cream
- 1/2 tsp vanilla extract
- 35g unsalted butter
- Pinch of salt

Method
For the pumpkin fritters:
- Heat the oil on medium heat in a medium-sized saucepan.
- Combine all the ingredients and mix until you have a smooth batter.
- Fry spoonfuls of the batter until golden brown, about 2–3 minutes.
- Remove from the oil and allow to drain on a kitchen towel.
For the butterscotch sauce:
- Put all ingredients in a saucepan over medium heat. Bring a gentle simmer for 4–5 minutes before removing from the heat.
- Pour over the pumpkin fritters and enjoy!
