Roast chicken the easy way

A beautiful and crispy roast chicken is one of the simplest things to make, and one of the most delicious and comforting meals you can serve your family.
Ingredients
1 full chicken, cleaned
2 tbs olive oil
Sea salt
Black pepper
Method
Preheat your oven to 180°C.
Start with a dry whole chicken. Pat the skin dry with paper towels, and pat the inside of the cavity dry as well.
Rub the olive oil into the chicken skin, ensuring that the entire chicken is covered with the oil. Sprinkle the sea salt and black pepper over the entire chicken.
Place the prepared bird on a wire rack inside a roasting dish and place it in the centre of the oven. Cook for one hour, or until the thickest part of the thigh’s temperature reads 71°C. Once it’s done, crank up the oven to 200°C and allow the skin to brown and crisp up for 5 to 10 more minutes.
Serve with roast potatoes and steamed vegetables.
