One of our kind listeners swooped in to save the day with some paptert

Nadine Ludick from Roodepoort jumped in to help after hearing how disappointed Rian was with the way this week's Takeaway Wednesday turned out.

Regular listeners of the Scenic Drive will know that Rian (and Pieter) really look forward to Takeaway Wednesday each week. It's a chance to take the stress out of preparing dinner on that night, as well as an opportunity to sample some of the best cooking from our listeners. 

So when, at the last minute, the paptert that the team would have had on 18 July was no longer available, Rian was devastated. 

Nadine Ludick called in from Roodepoort and offered to remedy the situation as soon as possible. She could not bear to see Rian and the team disappointed. And, as if she hadn't been kind enough, Nadine guaranteed that her paptert would be the best Rian ever tasted: Nadine's husband and children enjoy it so much that they even eat it as a dessert!

Here is how you can make the paptert the saved the day:

Nadine's Paptert 

Fry an onion, and add garlic
Add a chopped a green chilli and  mushrooms. Add green pepper and fry until soft. Add sliced bacon. 
Add a teaspoon of curry powder and a sachet of tomato paste. Leave the ingredients to simmer.

Add one tomato, cook until soft. Add cream to the pot and boil the mixture until it thickens.
Add two teaspoons of brown sugar and salt and pepper to taste. Set the mixture aside. 

Make a pot of pap. Just before it is done, stir in the ingredients of one can of sweet corn. 

Layer pap and sauce in an ovenproof dish. Grate cheese on top then bake until golden brown.
