Carla's Christmas kitchen: Lamb curry
Updated | By Carla Mackenzie
From a young age, I've never been able to cook. In fact I couldn't cook to save my life!
Instead I played hockey and ate only to sustain myself, not to enjoy delicious flavours.
This festive season, I'll be going home to my family in Cape Town thought I'd put my limited skills to the test and cook a delicious lamb curry!
It's pretty simple to make and coming from me that says a lot!
Happy holidays!
INGREDIENTS
15 - 20 pieces of lamb pieces
2 - 3 onions chopped finely
6 - 8 large potatoes cut into cubes
3 tablespoons of vegetable oil
6 cloves of garlic
1 big piece fresh ginger, peeled and finely grated
1 bunch of fresh coriander roughly chopped
2 heaped tablespoons of roasted masala/curry powder
2 teaspoons of turmeric powder
1 tablespoon of paprika powder (this is my secret ingredient)
2 teaspoons of salt
2 cardamom pods
1 stick cinnamon
1 teaspoon of chili powder
METHOD
In a large pot heat oil and add the lamb pieces, cardamom and stick cinnamon and chopped onions.
Braise until meat and onions are caramelised or golden brown.
Add grated garlic, ginger and salt and stir.
Add a cup of hot water and simmer on medium heat until the water has cooked out.
Add all your spices and let it braise with the meat for two minutes.
Add 3 cups of hot water and cubed potatoes and cook on medium heat for 50 - 55 minutes adding hot water when needed, stirring occasionally.
Just before serving add the chopped coriander.
Serve with basmati rice or a delicious flaky roti.
