An aromatic street snack in India, Rose Bhajias inspires us
A street vendor somewhere in India is seen using rose buds in a popular street food snack.
Walking along the Blue Lagoon beachfront, you will find many Durbanites standing in a line waiting to purchase some of our favourite snacks.
Vendors line up in their food huts, selling everything from kids' toys and clothing to sugarcane juice. It is a place where we convene to enjoy a moment away from home without going for a swim.
After getting our snacks, we walk on the promenade or let the kids kick a ball around.
Hot snacks like Veda, Gulgula, Samoosas, and Bhajia await the people from Durban and the surrounding areas who come for an afternoon out. These are well-known snacks for many people in the Indian community.
And as much as we all have different ways of making them, we were surprised to see vendors on the streets of India making their version of 'Bhajia'.
Their version of Bhajia had a fragrant appeal, one we wouldn't have expected to pair with the infamous Bhajia mix (Chilli Bites). The street vendor prepares red rose buds and then coats them in a batter that looks like 'Bhajia mix or Chilli Bite mix', which is what many South Africans know it as. He then deep fries them and serves them to his buyers.
