Elana Afrika-Bredenkamp's meat-free roti wrap
Updated | By Elana Afrika-Bredenkamp
For this one you are going to have to heat a pan... I promise it's a super simple recipe.
Purchase ready made roti at a supermarket. I stock up on fresh veggies on a Sunday. You can fill your wrap with ANYTHING.

METHOD:
Heat your pan with a little bit of oil, place your roti into the pan, and once it bubbles at the top, flip it around like they do in the movies.
Spread hummus on to the warm roti. Cut up all your ingredients that you want to fill your roti with. I’ve used avo, goats cheese, coleslaw, red cabbage, and sweetcorn.
When rolling your roti, pretend you are making sushi. I have actually never made sushi, but you want to fill the one side of the roti, fold over the side that is filled, and scrunch it as if you are holding onto a trapeze pole. Roll towards the open part and scrunch it again. Try not to cook your rotis in the pan for too long, otherwise they become too hard, and it will be too hard to roll.
And… that's a wrap!
