The kids will love this two-ingredient pancake recipe

Making snacks doesn't have to be time-consuming; this mum and foodie created a quick and easy pancake recipe with just two ingredients.
It's almost back to school for these kiddies and parents; it might feel one of two ways: either you sigh a long sigh of relief, or you feel like you missed out on spending time with them.
If you feel the latter, this is a fun and easy recipe you can make with the kids this weekend. It makes an excellent breakfast or snack.
One of the ingredients for these two-ingredient pancakes is ice-cream, so, technically, the kids are having ice-cream for breakfast (if you choose to make it for breakfast).
With just ice-cream and self-raising flour, foodie and mommy blogger Neha Gandesha makes pancakes.

A large scoop of ice-cream (vanilla is delish)
1 cup of self-raising flour
* I haven’t tried this with dairy-free ice-cream. If you try it, please let me know. This was regular ‘cheap & cheerful’ Neapolitan ice cream.
All you need to do is combine your ice cream and flour. You need to mix it really well so it’s a soft batter. Use the mix like pancake batter and pop some in a hot pan with a little oil. Cook for a few minutes on each side on medium heat. So good! You must try it!
