RECIPE: Elana Afrika-Bredenkamp’s meat-free curry

My mom never taught me how to cook, I learned how to make her dishes by tasting her food while she was making it. Here is my mom's curry, without the mince, chicken, and lamb.

Gather any veggies, YUM, and an onion. Start chopping. Use any curry powder of your choice. I buy mine in Durban from the market, but you can use any over the counter powders. Buy them mild and add chili if you need them hotter.
Method:
- Heat any cooking oil in a pot.
- Add the 2 tablespoons of curry and the onion to the pot. Fry them together.
- Add your veggies. The tomatoes gives more juice, and the potatoes makes more sauce.
- You can add a little water if you feel it's going to take a while to become saucy.
- Mix, keep heat high for 10 min and then turn down to low. Cook it slowly.
- Once the potatoes are soft, add chopped garlic, coriander, and ginger. Don’t stir too much, otherwise you are making soup.
