Sugar-free marshmallows for festive hot chocolate

It's Christmas time and all we can think of are the yummy treats that come along this season.

Christmas is filled with fun times, family, friends and yummy treats. 

While hot chocolate and marshmallows are typically seen as winter warmers, they've become synonymous with the festive season and are eagerly anticipated by both kids and adults alike. 

Meaghan Williamson, a mother, recently shared a delightful treat that not only makes for a tasty snack but also doubles as a bonding experience with the kids. 

She posted a sugar-free recipe marshmallow recipe that only uses three ingredients. 

The festive season brings many treats, and while it's tempting to indulge, it's important to be mindful of sugar intake.

You'll want to avoid loading your kids up on sugar, especially since it can lead to difficulties in getting them to sleep at night. Remember that even though they're on holiday, maintaining some routines can help them transition smoothly back to school when the time comes.  

Here’s a simple recipe for homemade marshmallows. You'll need:

  • 1 cup honey or maple syrup
  • 1 cup water (divided)
  • 4 tbsp gelatin
  • A saucepan and mixing bowl
  • Wax or parchment paper

Now, to make the marshmallows: 

  • In a small bowl, combine 1/2 cup of water and the gelatin. Let it bloom (absorb and thicken) while preparing the other ingredients.
  • Mix the honey (or maple syrup) in a saucepan with the remaining 1/2 cup of water. Heat over medium heat until it reaches a light boil, then remove from heat.
  • Add the bloomed gelatin to the bowl of a stand mixer. While mixing at low speed, slowly pour the hot honey mixture into the bowl.
  • Once combined, increase the mixer speed to high and whip for about 6 to 8 minutes until the mixture becomes fluffy and doubles in volume.
  • Pour the mixture into a parchment paper-lined baking dish. Spread evenly.
  • Let it set for a few hours or overnight at room temperature.
  • Once firm, cut into squares or use cookie cutters to make fun shapes.
